Ingredients:

 

For the Rice:

2 cups basmati rice (cooked and cooled, preferably a few hours old)

2 tablespoons ghee (clarified butter) or vegetable oil

1/2 cup finely chopped onions

1/2 cup finely chopped bell peppers (red, green, or both)

1/2 cup finely chopped carrots

1/2 cup peas (fresh or frozen)

2 cloves garlic (minced)

1-inch piece of ginger (minced)

1-2 green chilies (optional, finely chopped)

1 teaspoon cumin seeds

1 teaspoon garam masala

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

2 tablespoons soy sauce

Salt to taste

Fresh cilantro leaves for garnish

Instructions:

 

Prepare the Rice:

Cook the basmati rice and then let it cool. Need slightly cold rice or room temperature.

Heat vegetable oil or ghee in a large pan or wok over medium-high heat.

Add chopped onion, garlic, ginger and green chillies, Fry until onion becomes clear.

Cut capsicum and carrots in the pan. Fry them while stirring for three to four minutes until they become soft.

Sprinkle garam masala, red chili powder and turmeric powder on the vegetables. Mix the vegetables with the spices well.

Add cold rice to the pan. Mix everything together gently. Make sure the spices cover the rice completely.

Pour soy sauce over rice and mix well. Change the amount of soy sauce as per your taste preferences.

Mix rice mixture with peas. Continue frying for 2-3 minutes until everything is heated through.

Taste the rice, adding salt and spices if necessary.

Sprinkle fresh coriander leaves on Indian Veg Fried Rice.

Serve Indian Veg Fried Rice hot as a standalone or side dish. It tastes good in raita, pickle or curd.
