Chole Bhature Recipe – Chole Bhature
Chole Bhature is a popular North Indian dish consisting of spicy chickpea curry (chole) and deep-fried bread (bhature). It’s a delicious and satisfying dish, perfect for special occasions or a weekend treat. Here’s a recipe to make Chole Bhature at home:
Ingredients:
For Chole (Chickpea Curry):
- 1 cup dried chickpeas (chole), soaked overnight or for at least 8 hours
- 2 medium-sized onions, finely chopped
- 2 medium-sized tomatoes, finely chopped
- 2-3 green chilies, finely chopped (adjust to your spice preference)
- 1-inch piece of ginger, grated
- 4-5 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 1 bay leaf
- 1 cinnamon stick
- 4-5 cloves
- 2-3 green cardamom pods
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 tablespoon red chili powder (adjust to your spice preference)
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
- Lemon wedges for serving
For Bhature (Fried Bread):
- 2 cups all-purpose flour (maida)
- 1/4 cup semolina (sooji)
- 1/2 teaspoon baking powder
- 1/2 teaspoon sugar
- 1/4 cup plain yogurt
- 1/4 cup milk
- Salt to taste
- Oil for deep frying

Instructions:
For Chole (Chickpea Curry):
Soak chickpeas for six to seven hours.
Soak chickpeas, add enough water, a pinch of baking soda and salt and boil until soft. This may take 30 to 40 minutes. Filter it and keep it aside.
Heat oil in a large pan or pressure cooker. – Add cumin seeds and let it crackle.
Add cinnamon stick, cloves, cardamom pod and bay leaf. Forget until the smell comes.
Add green chillies and chopped onion. Fry until onion becomes clear.
Add minced garlic and grated ginger. Cook for a few more minutes until the raw smell no longer remains.
– Add chopped tomatoes and cook until tomatoes become soft and oil starts releasing.
Add red chilli powder, cumin powder, coriander powder, salt. Cook the masala for a few minutes or until oil starts separating.
Add boiled gram to the spice mixture and stir well.
Add enough water to get your gravy consistency. Stir occasionally and cook on low flame for about 15 to 20 minutes.
Finally add garam masala and cook for two or three minutes. Add salt and spices as per taste.
For Bhature (Fried Bread):
Mix flour, semolina, baking powder, sugar and a pinch of salt in a bowl.
Mix curd and milk into dry ingredients and make a soft dough. The quantity of milk may have to be changed slightly to get the right consistency.
Cover the dough with a wet cloth and keep it aside for two to three hours.
After resting for a while, cut lemon-sized pieces into small pieces and roll them into smooth balls.
Heat oil in a deep fryer or deep frying pan.
Roll each dough ball into a large ball, in the shape of a puri.
Carefully put the rolled bhatura in hot oil. Fry until golden on both sides. Use a slotted spoon to turn them as needed.
